The Empress is a heritage Canadian Pacific hotel which underwent a $50 million restoration in 1989. The hotel has worked hard at growing its food and wine reputation and The Empress Dining Room, with chef Iain Rennie, is considered one of the finest restaurants in B.C. Its 300-bottle wine list, with its emphasis on regional wines, has received a gold medal at the 1997 Vancouver International Wine Festival as well as special recognition from The Wine Spectator.
